White vegetable stock

onions 250 g
carrots 250 g
celery 250 g
leeks 250 g
water 4 itres

1 Roughly chop all the
vegetables.
2 Place all the ingredients into a
saucepan, add the water, bring
to the boil.
3 Allow to simmer for
approximately 1 hour.

Try something different
White fungi stock: add 200-400g
white mushrooms, stalks and
trimmings (all well washed) to the
recipe.
